Superfood Sushi Rice

Ingredients:
- 2 cups short-grain Japanese rice
- 2 cups of water
- 1/4 cup white wine vinegar
- 1/4 cup seasoned rice vinegar
- 1 1/2 tsp salt
- 2 Tbsp sugar
- 1 Tbsp Dragon fruit powder, Beet Powder, Activated Charcoal, Blue Majik powder
Directions
- In a fine strainer, rinse the rice with cold running water, until water runs clear. Pour rice into the pot with 2 cups cold water; let sit for 30 minutes.
- Bring rice to a boil over medium-high heat; immediately turn heat to low, and cover. Cook for 10 minutes, remove from heat and let sit, covered, for 15 minutes.
- In a small saucepan, dissolve the sugar and salt in the rice vinegar over a low flame. Once sugar is dissolved, take off the heat and let cool. Then whisk in color powder (dragon fruit, beet powder, blue majik)
- Transfer rice to a glass dish. Then using a wooden spoon, gently add vinegar mixture and mix well to combine.
- Let cool, then use it in your favorite rolls. Enjoy!
Instant Pot Sushi Rice
Ingredients:
- 2 cups short-grain Japanese rice
- 2 cups of water
- 1/4 cup white wine vinegar
- 1/4 cup seasoned rice vinegar
- 1 1/2 tsp salt
- 2 Tbsp sugar
- 1 Tbsp Dragon fruit powder, Beet Powder, Activated Charcoal, Blue Majik powder
Directions
- In a fine-mesh strainer - Rinse rice under cold running water for about 2 minutes, then let dry for a few minutes.
- Add rice and water to Instant Pot and use rice setting - low pressure for 12 minutes. Once cook time is complete, allow pressure to naturally release - about 10 minutes.
- In a small saucepan, dissolve the sugar and salt in the rice vinegar over a low flame. Once sugar is dissolved, take off the heat and let cool. Then whisk in color powder (dragon fruit, beet powder, blue majik)
- Transfer rice to a glass dish. Then using a wooden spoon, gently add colored vinegar mixture and mix well to combine.
- Let cool, then use it in your favorite rolls. Enjoy!
- Will make approximately 6 sushi rolls
