Chocolate Maca Parfait with Passion Fruit Sorbet
Indulge in my Chocolate Maca-Passion Fruit Parfait, a healthy treat with avocado, passion fruit, raspberries, mango, honey, maca, and cacao. Silky, tangy, tart, and sweet - a delicious blend of unforgettable flavors.
Ingredients:
- 4-6 large ripe avocados (peeled and pitted - approximately 3 lbs)
- 1 Tbsp raw mesquite powder
- 2 Tbsp raw maca powder
- 1½ Tbsp pure vanilla extract
- ¾ cup raw cacao powder
- 1 tsp sea salt
- 1 cup dates, raw honey* or sweetener of choice
- ½ cup of coconut oil
- water as needed
Directions
*If using dates, first blend them alone with coconut oil. It helps to soak the dates in water first to make blending easier. Once the dates are blended well, add the rest of the ingredients and blend until everything is incorporated and has a smooth pudding-like consistency. Add water if it’s too thick.
*If using a liquid sweetener, then you can add all the ingredients into the blender at one time.
Yields: approximately 60 oz
Toppings
Top with coconut flakes, cacao nibs, bee pollen, goji berries, fresh fruit or sorbet.

Passion Fruit, Mango & Raspberry Sorbet
Ingredients:
- 3 passion fruits
- 2 cups frozen mango
- 1 cup frozen raspberries
Directions
Blend all the fruit together. The frozen fruits will create a sorbet consistency. If you use all unfrozen fruit, then the consistency will be a thin liquid.
This creates a delicious sorbet treat all by itself. For the ultimate dessert, pair it with the Chocolate Maca Pudding! It’s beautiful when you layer it and make the chocolate pudding and sorbet into a parfait!!
